No-Bake Homemade Crunch Bars

In a microwave-safe bowl, melt the chocolate chips, peanut butter, and salt together. Alternatively, use a double boiler method by adding an inch of water to a small saucepan and placing a heat-safe bowl on top. Bring the water to a boil, then gently stir the chocolate chips, peanut butter, and salt together until smooth and melted.
Place the rice cereal and chopped peanuts (if using) in a large bowl. Pour the melted chocolate mixture over the rice cereal and stir well until the cereal is evenly coated.
Lightly grease an 8x8-inch square pan and press a piece of parchment paper into the bottom to hold it in place.
Transfer the coated cereal mixture into the prepared pan. Smooth the top with a spatula. Place the pan on a flat surface in the freezer to chill until firm, about 1 hour.
Once the chocolate is firm, lift the bars out of the pan using the parchment paper. Use a sharp knife to slice the bars into 1-inch pieces.

Keep the crunch bars in an airtight container in the fridge for up to 2 weeks. If using all-natural peanut butter, they may soften if left at room temperature for too long. For longer storage, freeze the bars for up to 3 months.
