Peaches and Cream Bars

Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper or lightly grease it.
Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
Prepare the Cream Cheese Layer: In a large bowl, beat the softened cream cheese and 1/2 cup sugar until smooth. Add the egg and vanilla extract, and continue to beat until well blended. Spread the cream cheese mixture evenly over the crust.
Prepare the Peach Layer: In a separate bowl, combine the diced peaches, 1/4 cup sugar, cornstarch, and cinnamon. Mix well to coat the peaches. Spoon the peach mixture evenly over the cream cheese layer.
Bake: Bake in the preheated oven for 30-35 minutes, or until the top is set and slightly golden.
Cool and Chill: Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
Serve: Cut into bars and serve chilled. Enjoy!
