Spicy Sausage Beer Cheese Dip

In a large skillet, heat the olive oil over medium heat. Add the hot sausage and cook until browned, breaking it up with a spoon as it cooks.
Add the chopped onion and garlic to the skillet. Sauté until the onion is translucent, about 5 minutes.
Pour in the beer and bring to a simmer. Let it cook for 5 minutes, allowing the alcohol to cook off.
Reduce the heat to low and stir in the cream cheese until melted and smooth.
Gradually add the shredded cheddar and mozzarella cheeses, stirring continuously until fully melted and combined.
Add the smoked paprika, cayenne pepper, salt, and pepper. Stir to combine.
Transfer the dip to a serving bowl and garnish with chopped green onions.
Serve warm with pretzels, bread, or vegetables for dipping.
