Banana Cheesecake Muffins
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and mashed bananas until well combined.
Gradually mix the dry ingredients into the wet ingredients until just combined.
In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Fill each muffin cup halfway with banana batter. Add a spoonful of the cream cheese mixture, then top with more banana batter to fill each cup about 3/4 full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
