Crispy Southwest Fiesta Rolls

In a large bowl, combine chicken, corn, black beans, spinach, red bell pepper, and jalapeno.
Season with cumin, chili powder, salt, and black pepper; mix well.
Stir in Monterey Jack cheese until evenly distributed.
Lay an egg roll wrapper on a clean surface, point facing you. Place about 2-3 TBS of the filling in the center.
Fold the bottom point over the filling, tuck in the sides, and roll tightly. Seal edges with water.
Place on a baking sheet and freeze briefly if not frying or baking immediately.
For frying: Heat oil to 350°F and fry each roll for 2-3 minutes per side until golden. Drain on paper towels.
For baking: Preheat oven to 425°F, brush rolls with oil, and bake on a lined sheet for 15-20 minutes, turning halfway through.
