Macaroni Cheese Stuffed Honey Barbecue Meatloaf

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, bread crumbs, eggs, diced onion, garlic powder, dried parsley, Italian seasoning, honey barbecue sauce, salt, and pepper. Mix until everything is well incorporated.
Spread the meat mixture out on a flat surface, forming a rectangle about 1/2 inch thick.
Evenly spread the creamy mac and cheese over the meat mixture, leaving a small border around the edges.
Sprinkle the shredded mozzarella on top of the mac and cheese.
Carefully roll the meat mixture into a loaf, making sure to seal the edges to enclose the filling.
Place the meatloaf seam-side down on the prepared baking sheet.
In a small bowl, whisk together the ketchup, brown sugar, yellow mustard, and honey to make the sauce.
Brush half of the sauce over the top of the meatloaf.
Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Remove from the oven and brush with the remaining sauce. Let the meatloaf rest for 10 minutes before slicing and serving.
