Southern Candied Sweet Potatoes

Prepare the Sugar Mixture:
In a small bowl, mix together 2 cups of white sugar, 1 teaspoon of ground cinnamon, 1 teaspoon of ground nutmeg, and a pinch of salt. 



Cook the Sweet Potatoes:
In a large skillet, melt 1/2 cup of butter over medium heat. 

Add the sliced sweet potatoes to the skillet and stir to coat them with the melted butter. 

Sprinkle the sugar mixture over the sweet potatoes and stir to coat them evenly. 



Simmer the Sweet Potatoes:
Cover the skillet and reduce the heat to low. 

Cook the sweet potatoes, stirring occasionally, for about 1 hour, or until the sauce becomes dark and the potatoes are candied. The sweet potatoes should be tender but slightly firm around the edges. 



Add the Vanilla:
Stir in 1 tablespoon of vanilla extract into the candied sweet potatoes just before serving. 

Serve:
Serve the candied sweet potatoes warm as a delicious side dish. Enjoy!
