Sweet Potato Cornbread Bars

Preheat your oven to 350°F (175°C).
Grease and line an 8x8 inch baking pan with parchment paper.
Prepare Wet Ingredients:
In a large mixing bowl, combine the mashed sweet potatoes, melted butter, buttermilk, eggs, and vanilla extract. Mix well until smooth.
Mix Dry Ingredients:
In a separate bowl, whisk together the cornmeal, flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
Combine Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Bake:
Pour the batter into the prepared baking pan and spread it evenly.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the cornbread bars to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Cut into bars and serve warm or at room temperature.
