Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with nonstick spray or butter.
Prepare the Hash Browns:
In a large mixing bowl, combine the frozen hash browns, salt, pepper, garlic powder, onion powder, paprika, and 1 cup of the shredded cheddar cheese. Mix until the hash browns are evenly coated with the seasonings.
Assemble the Casserole:
Spread the seasoned hash browns evenly in the prepared baking dish. Sprinkle the cooked and chopped bacon over the top of the hash browns.
Make the Egg Mixture:
In a separate bowl, whisk together the eggs and milk until well combined. Pour the egg mixture over the hash browns and bacon in the baking dish.
Add Cheese:
Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole.
Bake the Casserole:
Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the eggs are fully set and the top is golden and bubbly. You can check the center with a toothpick; if it comes out clean, the casserole is done.
Serve:
Let the casserole cool for a few minutes before cutting into squares and serving. Enjoy this hearty breakfast dish on its own or with a side of fresh fruit.
