Hearty Slow-Cooked Lamb Rogan Josh
Heat the vegetable oil in a large frying pan over medium heat. Add the chopped onions and cook until golden brown.
Add the garlic and ginger, cooking for another 2 minutes until fragrant.
Stir in the ground spices: coriander, cumin, turmeric, paprika, chili powder, cinnamon, and cardamom. Cook for 1 minute.
Add the lamb cubes to the pan, turning to coat in the spices and cook until browned all over.
Transfer the lamb and spices to the slow cooker.
Add the chopped tomatoes, tomato purée, lamb stock, and sugar to the slow cooker. Stir well to combine.
Cover and cook on low for 6-8 hours, or until the lamb is tender.
Stir in the natural yogurt and season with salt and pepper to taste.
Garnish with fresh coriander before serving.
