Old Bay Garlic Shrimp Pasta

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Shrimp: In a large bowl, toss the shrimp with 1 teaspoon of Old Bay seasoning, smoked paprika, sea salt, and black pepper.
Cook the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
Cook the Garlic: In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Cook until fragrant, about 1 minute.
Add the Tomatoes and Broth: Add the cherry tomatoes to the skillet and cook until they start to soften, about 3-4 minutes. Pour in the vegetable broth and bring to a simmer.
Make the Sauce: Stir in the heavy cream or coconut milk, remaining 1 teaspoon of Old Bay seasoning, and grated Parmesan cheese. Cook, stirring frequently, until the sauce thickens slightly, about 3-5 minutes.
Combine Pasta and Shrimp: Add the cooked pasta and shrimp back into the skillet. Toss to coat everything evenly with the sauce. Cook for an additional 2-3 minutes until heated through.
Finish the Dish: Stir in the fresh lemon juice and chopped parsley.
Serve: Divide the pasta among plates and serve with lemon wedges on the side.
