Classic Southern Lemon Chess Pie
Preheat your oven to 350°F (175°C). Place the unbaked pie crust in a 9-inch pie dish.
In a large bowl, whisk together the sugar, cornmeal, flour, and salt until well combined.
Add the melted butter, eggs, milk, lemon juice, lemon zest, and vanilla extract to the bowl. Whisk until smooth and fully incorporated.
Pour the filling into the prepared pie crust.
Bake for 45-50 minutes, or until the filling is set and the top is golden brown. A toothpick inserted into the center should come out clean.
