Cowboy Butter Lobster Tails
Prepare the Lobster Tails:
Preheat your oven to broil.
Using kitchen shears, cut down the top of the lobster shells lengthwise to the base, but do not cut through the tail. Gently pull the lobster meat up and over the shell, keeping it attached at the base.
Make the Cowboy Butter:
In a small bowl, combine the melted butter, minced garlic, Dijon mustard, smoked paprika, lemon juice, red pepper flakes, chopped parsley, salt, and pepper. Mix well to combine.
Season the Lobster:
Place the prepared lobster tails on a baking sheet. Brush the lobster meat generously with the cowboy butter mixture, making sure to coat all sides.
