Polish Sausage, Sauerkraut, and Potatoes
In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the sliced Polish sausage and cook for 5-7 minutes until browned. Remove the sausage from the skillet and set aside.
In the same skillet, add the sliced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
Add the cubed potatoes to the skillet and cook for 5-7 minutes until they start to brown.
Stir in the sauerkraut and chicken broth. Add the caraway seeds (if using), and season with salt and pepper to taste. Bring the mixture to a simmer.
Return the browned sausage to the skillet. Cover and cook for 20-25 minutes, or until the potatoes are tender and the flavors are well combined.
Garnish with freshly chopped parsley before serving.
