Ultimate Old-Fashioned Mac and Cheese
Preheat your oven to 350°F.
Cook the macaroni according to package instructions. Drain and set aside.
In a large saucepan, melt the butter over medium heat.
Stir in the flour to form a roux, and cook for about 1 minute until bubbly.
Gradually whisk in the milk, and cook until the mixture thickens and starts to bubble.
Stir in the salt, pepper, and 1 1/2 cups of cheddar cheese. Cook until the cheese is melted and the sauce is smooth.
Add the cooked macaroni to the cheese sauce, and stir until well coated.
Pour the macaroni and cheese into a greased baking dish. Sprinkle the remaining cheddar and Parmesan cheese on top.
Optionally, sprinkle with paprika for a little extra flavor.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
