Beef Lombardi Delight
Preheat your oven to 180°C (350°F) and grease a 9x13-inch baking dish.
In a large skillet, cook the ground beef, chopped onion, and minced garlic over medium heat until the beef is browned and the onion is soft. Drain excess fat.
Stir in the diced tomatoes, tomato sauce, chilli powder, salt, and pepper. Simmer the mixture for 10 minutes, allowing the flavours to meld together.
Meanwhile, cook the egg noodles according to the package instructions until al dente. Drain and set aside.
In a large mixing bowl, combine the cooked egg noodles with the sour cream.
Spread the noodle mixture evenly in the bottom of the prepared baking dish.
Top the noodles with the beef mixture, spreading it out evenly.
Sprinkle the shredded cheddar cheese and mozzarella cheese over the beef layer.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let the dish rest for a few minutes before serving. Garnish with chopped fresh parsley if desired.
