Cowboy Quiche Comfort

1️⃣ Preheat your oven to 190°C (375°F). 🌡️
2️⃣ In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet. 🥓🍳
3️⃣ Add the sliced onions to the skillet and cook in the bacon fat until they are caramelised and golden brown, about 10-15 minutes. Remove from the heat and let cool slightly. 🧅🥓
4️⃣ Roll out the pie crust and fit it into a 9-inch deep-dish pie pan or quiche dish. Trim the edges and set aside. 🍞🥧
5️⃣ In a large bowl, whisk together the eggs, heavy cream, salt, black pepper, and ground nutmeg (if using). 🥚🥛
6️⃣ Add the cooked bacon, caramelised onions, grated cheddar cheese, and grated Parmesan cheese to the egg mixture. Stir to combine. 🧀🥓
7️⃣ Pour the filling into the prepared pie crust, spreading it out evenly. 🍳🥧
8️⃣ Bake in the preheated oven for 40-45 minutes, or until the quiche is set in the centre and the top is golden brown. ⏲️🥧
9️⃣ Allow the quiche to cool for 10 minutes before slicing and serving. 🌬️🍴
