Lemon Herb Roasted Chicken
Prepare the Chicken:
1. Preheat Oven: Preheat your oven to 425°F (220°C).
2. Prepare Chicken: Pat the chicken dry with paper towels. Season the cavity of the chicken with salt and black pepper. Stuff the cavity with lemon halves, garlic halves, and a few sprigs of rosemary and thyme.
3. Make Herb Mixture: In a small bowl, mix together the olive oil, lemon juice, lemon zest, chopped rosemary, thyme, and parsley. Season with salt and black pepper.
4. Season Chicken: Rub the herb mixture all over the chicken, making sure to get under the skin and inside the cavity for maximum flavor.
