Soft Pumpkin Sugar Cookies Recipe

o Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Prepare the Dough:
o In a medium bowl, whisk together the flour, baking soda, cream of tartar, salt, and pumpkin pie spice. Set aside.
o In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the pumpkin puree, egg, and vanilla extract, and mix until well combined.
o Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
3. Prepare the Sugar Coating:
o In a small bowl, combine the granulated sugar and ground cinnamon.
4. Form the Cookies:
o Using a cookie scoop or tablespoon, scoop out dough and roll into balls. Roll each ball in the cinnamon-sugar mixture to coat.
o Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
