Street Corn Chicken Rice Bowl Recipe
o In a medium saucepan, combine the rice, chicken broth, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.
2. Prepare the Chicken:
o In a bowl, toss the diced chicken with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
o Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until the chicken is cooked through and slightly crispy. Remove from heat and set aside.
3. Prepare the Street Corn:
o In the same skillet, heat the olive oil over medium-high heat. Add the corn kernels and cook for 5-7 minutes until slightly charred.
o In a large bowl, combine the charred corn, cotija cheese, mayonnaise, lime juice, chili powder, and chopped cilantro. Mix well.
