Tuscan Salmon
1. **Prepare the Salmon:**
- Pat the salmon filets dry with paper towels and season both sides with salt and pepper.
2. **Cook the Salmon:**
- Melt the butter in a large skillet over medium heat and add olive oil. Once the butter stops sizzling, swirl the skillet to combine the butter and oil.
- Add 2 or 3 rosemary sprigs to the skillet to flavor the oil.
- Place the salmon filets in the skillet and cook until lightly browned and the salmon flakes easily with a fork, about 3 minutes per side. (If the salmon filets are thinner than 1½ inches, this may take less time.)
- Check that the salmon reaches an internal temperature of 145°F (63°C).
- Remove the salmon from the skillet and keep warm.
